A Tribute To Rain

Dear Caramel Family,

      It is with the heaviest hearts that we share the passing of our beloved founder, Rain McDermott. Rain lost her courageous battle with breast cancer, but not without an incredible fight—full of strength, grace, and unwavering spirit. She gave her all, just like she did in everything.

     Rain poured her heart into Dallas Caramel Company for over a decade—creating every flavor, perfecting every product, and developing a company grounded in kindness, creativity, and integrity. She built more than a caramel company—she built a community that reflected her warmth, passion, and dedication.

     To those who had the privilege of knowing her, Rain was a light. She was fiercely loved and deeply respected, not just for her entrepreneurial spirit, but for her generous heart, contagious smile, and belief in sweetening the world—one caramel at a time.

     Though we mourn her loss, we are committed to carrying forward her legacy with the same love and excellence she infused into everything she touched. Dallas Caramel Company will continue to be guided by her vision, her recipes, and the joyful spirit she brought to all of us.

     At Dallas Caramel Company, we’re committed to carrying on Rain’s legacy by staying true to the values she built this company on: never changing our delicious, time-tested recipes, never using preservatives—just real, quality ingredients—always honoring and giving back to our community, and treating our employees and customers with the utmost respect and appreciation. That means continuing traditions like handwritten thank you cards, because every detail matters. And of course, we’re still chasing Rain’s ultimate dream: achieving World Caramel Domination, one sweet bite at a time.

Lemon Meringue

The Lemon Meringue Caramel was inspired by a lemon balsamic vinegar that Rain had at Dallas Market in 2015. After that, she knew she wanted to create a lemon caramel and worked on it for 6 months. When it wasn't what she wanted, she took a break. Then one night she was awoken with an idea that would lead her to the caramel it is today! This caramel went on to win two golds and two silvers in the Luxury Caramel Awards confirming it's perfection!

 

Horned Toads

If you ever asked Rain what the difference was between the Armadillo and the Horned Toad, chances are she would explain it like this. "Are you one that likes to keep all of your food separate on your plate(Armadillo) or one that likes got mix it all up(Horned Toad.) Based on your answer is how she would recommend which one she thought you'd like best. Though she liked all of our TXTurtles, the Horned Toad was and we quote "her jam!"

 

Toffee Pretzels

The perfect combination for salty and sweet, the Toffee Caramel Pretzel was Rain's favorite and often her breakfast. Especially when freshly made, it wasn't rare to catch Rain snacking on this delicious treat!
