Drunken Nut Caramel Bread Pudding

Ingredients:

  • 4 tbsp unsalted butter
  • 1/2 Cup Drunken Nut Caramel Sauce or 8 caramel pieces(use flavor of choice)
  • 1/2 cup pecans chopped 
  • 1 1/2 cup heavy cream
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 large egg + 2 large egg yolk
  • 1 package of Hawaiian dinner rolls

Directions:

Preheat oven to 325. Lightly toast pecans for about 2 minutes. Grease an 8x8 square pan. Melt butter in a medium bowl. Whisk in the heavy cream, water, sugar, cinnamon, nutmeg, and vanilla. Stir in the egg and egg yolk. 

Place the rolls into the pan and cut them up into cubes. You can also use your hands to break them up into pieces. Pour the cream and egg mixture over the bread and let sit for 5 minutes. Drop 2 tbsp worth of sauce around the top of the bread pudding. If using pieces, melt them down in the microwave in 15 second intervals until melted. Add a splash of heavy cream or milk to thin. Bake for 20 minutes. Pull the bread pudding out and top with the pecans. Place back into the oven and cook for an additional 20 minutes or until set. Let the bread pudding cool for 10 minutes. 

Cut into desired sizes and plate. Drizzle each piece with the remaining caramel sauce or melted caramel. ENJOY!
